Mark Dewar, a highly motivated hospitality professional, brings over thirty five years of diverse industry excellence and understanding to the table.
An advocate for the highest standards of quality related to products, service and top-caliber staff development, Mark championed the creation and operation of two very successful restaurants, still currently in operation today. In addition to his extensive experience in the culinary industry, he discovered very early in his hospitality career that he possessed the natural skill set required to succeed as a recruiter. Having experienced the industry from the perspective of a top recruiter for both a private boutique search firm and a national corporate recruiting firm, Mark wanted to provide a personalized, more hands on experience for both his clients and candidates. He discovered and implemented opportunities for improvement that led him to establish this company, based on diversification and focused on the critical element of long-term client and candidate relationships.
Mark holds earned degrees in the Culinary Arts and Entrepreneurism from Johnson and Wales University, as well as earned degrees in the Culinary Arts and International Business from universities in Ireland, Holland and China.
As a by product of his original career, Mark likes to spend his free time developing gastronomical delights for family and friends, with a preference for using ingredients from his garden outside of Chicago, as well as those sourced from surrounding farming communities. He is also an avid global traveler, with his sights set on the exploration of the Southern Hemisphere.
Hilary Tolman is one of the founding members of Trinity Hospitality Partners; a trilingual senior Talent Acquisition and strategic HR Advisor with over thirty years of multicultural career experience, both as a consultant and within the corporate world.
Hilary has worked in recruiting in France, where she co-owned a recruiting company and headhunted multilingual executives for companies such as Xerox, Ubisoft, Monique l’Huillier and the Forte Hotel Group; in the UK, where she helped Gordon Ramsay source international staff for his US restaurants; and in the United States - first for Chef Daniel Boulud’s restaurant empire and then as a freelance HR, Hospitality Immigration and Talent Acquisition Consultant for various restaurant and hotel groups. Her recruitment work in the hospitality industry led her to focus on the immigration based talent acquisition of staff needing work permits, from J-1 to O-1 visa holders. During this time, she was invited to join the International YMCA Career Advancement Advisory Board, responsible for determining visa policy and regulations for one of the largest United States Department of State designated J-1 visa program sponsor organizations.
Hilary attended Smith College, where she majored in Liberal Arts. She is a member of the President’s Circle at Smith and on the board of the college’s Asian Art Task Force. Her donation of The Hilary Tolman Collection of Post War Japanese Prints to the Smith College Museum of Art is currently one of the strongest college collections of postwar Japanese prints.
Hilary resides in New York City with her son, Lucas. The Tolman Collection of Tokyo's Advisor - Special Projects and Philanthropy, she remains involved with her family’s art business through the sponsorship of contemporary Japanese art to museums around the world and also consults with a variety of US organizations on projects relating to doing business in Japan.
